Rhubarb Jam

Our rhubarb is coming in and thought I would share a fast jam recipe from a wonderful neighbor that the girls called, Granny Pinkham..She is gone now, but the love she gave to all of us, will always be in our hearts..

Rhubarb Jam
5 cups rhubarb, cut in small pieces
1 cup drained crushed pineapple
4 cups sugar
1 pack strawberry jello ( I used the small one)

Mix rhubarb, sugar and pineapple together in large kettle, let stand for 30 minutes.
Bring slowly to a boil and cook for 12 minutes, remove from heat and stir in jello till dissolved..Pour into sterilized jars..Now she has topped the jars with paraffin. Today things are done different with canning..so do as you see fit..I have to tell you, my mother only used paraffin on all her jellies/jams and never had a problem..but it is not recommended today..
This is more like a loose jam, maybe if you use the large jello package it would set firmer.
No matter what you do with it, it is delicious...

Oh...I'm going to miss my rhubarb plants! I wonder how they would do growing in the desert?

Any recipe from grandma has to be good!

Yum! I've been trying to get some plants for my own garden, but haven't had much luck procuring them. Rhubarb is sooo tasty.

I LOVE rhubarb, but we have the wrong climate down here for it. My grandmother grew rhubarb for YEARS. She had plants in her Michigan backyard that lasted 20 years! She could make a strawberry rhubarb pie that would knock your socks off.

Yum! My grandma used to make a strawberry rhubarb tart-thingy...soooo good. Grandma's have the best recipes! :)

Oh YUM!! I made one very similar that had a can of cherry pie filling rather than the pineapple. My family members are still asking me to make it again!

In Hawaii, rhubarb is not something that we use/eat regularly or at all. I've seen it in the markets. This might be a good time to try a new thing...which would be a good thing. Thanks for sharing. ;)
