Cloudy

First the sun behind a cloud, then the snow..
Even though it was a dusting..so happy this is the last day of January..even if February can be snowy, the days are longer and the sun stronger..We are edging up to spring. Thank you God.

The Sun.


Having fun with the sun..without looking at it through the camera..Never, ever look at the sun directly, it can ruin your vision.
I would just aim it toward the sun and snap a picture..
It was very warm and beautiful here with the sun shinning. They call this a January thaw and I am trying to take advantage of it.
There is always something to be happy about, if we just give it time. The old line, "Darkest before the dawn."..

Something Different..HA!

Oh well, not getting out and about lately..so this is the best I've got..and about all we see in winter.
Sure it is beautiful and the pictures are nice..but I can't wait till spring..

Apple Jelly.


We had many apples from the Farm Stand and was so worried they would go bad..Well, first I made an Apple Crisp with them..Now, I saved the peels/cores, added a bit of water cooked them and when I thought they were soft enough, I put them into my jelly bag..drained the liquid, squeezed it a bit..(I did get a little fine pulp and the jelly wasn't as clear) to get all I could. .
It is funny how much I remember from my mother..She always told me about how my grandmother would make peach jam, save the peels and make peach jelly..Now this is what I call smart.
Course my grandmother came from Poland and raised 14 children; here in America..They had a farm and she was a wonderful cook..so was my mother...So now I share the Apple Crisp..simple, but tasty..

Apple Crisp is very easy..just peel the apples, slice thin and put in an 8" square dish. Separate bowl,.Mix 1cup flour, 1 cup sugar, 1tsp salt, 1 tsp bake. powder, cinnamon to taste. Add 1 egg to the dry ingredients and mix till crumbly, melt 1 stick of butter...put mixture on top of apples, drizzle butter over top. Bake 350 for about 1 hour..Can't beat it..
Put some whip cream/ice cream on top and you have a nice dessert.
Now use the scraps..peels/cores for jelly...very little wasted.
I won't kid you..there is something about seeing how much you can save..It makes you proud of yourself.
I will probably give most of my jelly away to family/friends..nothing like sharing the wealth.
Note:..I would only use organic apples/peaches..

Wet Snow.

 We have been having snow with rain mix..it makes for a beautiful scene, but so dangerous if you have to drive on the highway..Thankful we don't..
Right after these pictures, it started raining and the trees are free from snow..but the yard isn't..Now the wind will come in tonight..Not a nice combo..
Just thankful we are warm and cozy..and pray for those that have to travel to jobs/school, to be kept safe.

This is a picture of my loving mom..when we visited Hawaii, in "87..Well, I happen to come across a shopping list of hers from 1934 and thought I would share it..just to show how far we have come..and I am not talking about for the better either..
butter..29cents
1lb.coffee..23cents
31/2lbs flour..15cents
loaf bread...7cents
8cans milk..48cents
1lb lard...9cents
1 bot.vinegar...15cents..
2 doz.eggs..50cents
3 fruit salad...25 cents
5 cans tomato sauce...23 cents.

Beef Stew Recipe..
2 lbs beef stew meat, lean
1 quart potatoes
2 cups cut carrots
2 chopped onions
1cup tomatoes
1TBS salt
1/4 tsp pepper
2 TBS chopped parsley..
add your broth/water and cook..I assume..she didn't put anything else down on the recipe..but I must tell you..My dad always said she could get rocks from the sound and make a wonderful soup..A wonderful mother and wonderful cook..
