Summer Squash




The summer squash is starting to grow really nicely..as you can see by the pictures.
A recipe I like is to grate it and steam with grated carrots..then, when cooked, you can add butter/salt/pepper and cheese..Let the cheese melt..Some may think it isn't healthy, but you don't need that much butter/cheese to make it tasty and always use organic..

That sounds like a nice simple recipe that even I could follow ;) Thanks for sharing it. I'll give it a go! Must confess, I'm always a little heavy-handed with the butter & cheese. Squash are yummy roasted also :)

That sounds really good! Here in the south we always add Vidalia onions with any good squash recipe. :)

I just made zucchini bread and zucchini pancakes. It's hard to believe I'll be sick of this veggie in a few more weeks.

We call them yellow zucchini over here, they look exactly the same and there is also a green variety. We haven't had much success growing them up here, we get them on, they look fantastically healthy and then the go brown and die off overnight? I will definately be trying that recipe, will just have to do it with shop bought ones!!
